In case you missed it, here’s a look back at a few business highlights for the past week.

Tyson Foods

Leading food processor, Tyson Foods, will create more than 1,500 jobs and invest over $300 million in Humboldt, which represents Tyson’s biggest investment in Tennessee and the single largest investment in Gibson County’s history.

Tennessee Gov. Bill Haslam, Department of Economic and Community Development Commissioner Bob Rolfe and Tyson Food, Inc. officials announced Monday that the company will locate new operations in Gibson County.

Tyson Foods is one of the world’s largest food processing companies.

The company produces chicken, beef and pork, as well as prepared foods. The company offers food products under Tyson, Jimmy Dean, Hillshire Farm, Sara Lee, Ball Park, Wright, Aidells and State Fair brands.

Tyson currently has four facilities in Tennessee and employs approximately 5,000 Tennesseans.

JEA Board of Trustees

Members of the Jackson Energy Authority board of directors passed six resolutions during Monday’s monthly meeting at the Tennergy Building.

Property sold

According to the Madison County Register of Deeds, the property that houses a KFC on North Highland Avenue, has been sold.

Gelman Family Horizons LLC to JRN Inc, 2051 North Highland Avenue, $1,457,500.00

Voice messages left with JRN Inc., were not returned, and management at KFC at the North Highland restaurant declined to comment.

New restaurant near Ballpark at Jackson

The construction you might have noticed in Park Place East, located off Dr. F.E. Wright Drive between Taco Bell and Holiday Inn Express is a new Waffle House.

A timeline for opening has not been announced for the fourth Waffle House in Jackson.

Waffle House, 1724 South Highland Avenue remains, closed for a complete renovation.

The company built a new restaurant at 2314 N. Highland Ave., replacing the original restaurant that first opened in Jackson, Aug. 2, 1977.

Waffle House re-opened the restaurant in January.

In May, Waffle House re-opened at 24 Casey Jones Lane, after completing construction of a new 1724-square-foot facility which was necessitated because of the new configuration of the U.S. Highway 45 Bypass near Interstate 40.

The Casey Jones location opened Sept. 8, 1983, and its South Highland location opened Sept. 9, 1992.
