In case you missed it, here’s a look back at a few business highlights for the past week.

Cook Out opening at 4 Stonebridge Boulevard

Cook Out, an American privately owned fast food restaurant chain is in the process of opening at 4 Stonebridge Blvd., in Jackson.

The menu includes grilled hamburgers, hot dogs, chicken sandwiches and North Carolina barbecue.
The property – formerly the home of Coyote Blues – sold for $1,490,000 in September, 2017.

Founded in Greensboro, North Carolina, in 1989, Cook Out is located in over 100 cities with drive-thru restaurants in Alabama, Georgia, Kentucky, South Carolina, Tennessee, Virginia, West Virginia, Mississippi and Maryland.

Company officials could not be reached for comment.

The Jackson Symphony announces its 58th Season of Performances

Founded by a group of leading citizens to bring classical music to the City of Jackson in 1961, the Jackson Symphony announced its 58th season of performances during a press conference at the Carl Perkins Civic Center, Friday.

Arabian Nights is opening night, and will be held at 7:30 p.m., Saturday, Sept. 8.

The annual – and popular – Starlight Symphony follows three weeks later – when the free gift to the community is held at First Presbyterian Church at 6:45 p.m., September 29.

Famous Four Notes – the overture of Mozart’s dazzling fairy tale “The Magic Flute” – will be held at First Baptist Church, at 7:30 p.m., November 3.

Holiday Pops kicks off the holiday season at the Carl Perkins Civic Center at 7:30 p.m., December 1.

Everybody Loves Somebody extends Valentine Day two days, when the concert is held at the Carl Perkins Civic Center at 7:30 p.m., Saturday, February 16, 2019.

The Civic Center is the setting for the “Best of Your Memories,” at 7:30 p.m., Saturday, April 13, 2019.

Change of Seasons is the Season Finale at at 7:30 p.m., Saturday, May 11, 2019.

“Everybody knows us from the Starlight Symphony,” Peter Shannon said. “A lot of people come to our Christmas concert, but the Jackson Symphony performs a myriad of other concerts – chamber music and classic concerts and pops concerts right here in Jackson, every month.”

Peter Shannon became the third Artistic Director and Conductor for The Jackson Symphony in the 2014-2015 season.

“First and foremost, I want to thank the musicians, because without the musicians, none of us would be here,” Shannon said. “The passion and the energy and the work ethic they bring is always is reciprocal motivation for me.

“I would like to thank our Board … we have a wonderful, wonderful board … that are giving of their resources – of all their resources, their financial resources – of their time and commitment.”

KFC re-opens on North Highland Avenue
Following a new flagship design, KFC, 2051 North Highland Avenue reopened at 10 a.m., Friday.

The “American Showman,” consists of a complete facelift of the building’s interior and exterior by Richardson Turner Construction (RTC) of Knoxville.

The exterior of the 2,800-square-foot building is red and white, and RTC gutted the interior to make way for new windows, new tile flooring and new equipment.

The restaurant is open 10 a.m. to 10 p.m., seven days a week, and has a capacity for 90 people.

Bennigan’s still on hold

The wait – three years to be exact – continues for Bennigan’s to open in a new 18,000-square-foot retail center on the southeast corner of Dr. F.E. Wright Drive and Whitehall Street.

The Irish pub-themed casual dining restaurant is scheduled to be owned by Donald and Kimberly Lloyd, who also own the Huddle House restaurant, which is adjacent to the new retail center at 1118 Whitehall Street.

“The plan was to have Don Lloyd, who is the management group for the Huddle House, to also manage Bennigan’s,” Stan Pilant said. “But the bank felt they wanted to see some success and track record on the Huddle House before they entered into a situation financing him in terms of Bennigan’s Restaurant.”

Stan Pilant is the director of planning for the City of Jackson.

Donald or Kimberly Lloyd, who opened Huddle House January 16, 2017, could not be reached for comment.

Bennigan’s is scheduled to occupy about 5,000-square-feet in the center – Bre Avenue at Madison Place.

There are no tenants in the building to date.

Waffle House opens restaurant No. 4 in Jackson

Waffle House opened its fourth restaurant in Jackson, Tuesday.

The new restaurant is located on Parkstone Place in Park Place East, located off Dr. F.E. Wright Drive between Taco Bell and Holiday Inn Express.

Waffle House also has locations at 1724 South Highland Ave., 2314 N. Highland Ave., and 24 Casey Jones Lane, which re-opened in May, 2017, following construction of a new 1724-square-foot facility, which was necessitated because of the new configuration of the U.S. Highway 45 Bypass near Interstate 40.

A fifth Waffle House is scheduled to be built at the corner of South Highland Avenue and East Chester Street.
