Jacob & Regina Richmond open ‘Skillet Junction’ restaurant in historic Neely House

It has become apparent Jacob and Regina Richmond were made for the restaurant industry.

In October, the Jackson couple opened their third restaurant – Skillet Junction at 575 South Royal Street.

Jacob and Regina also own Saucy Jake’s, 936 Campbell Street, and Peppermint Addie’s, which is located at 112 E. Baltimore Street.

“Skillet Junction tells the story of our life,” Regina said, “With three different businesses, it incorporates into our life what we enjoy – which is family and food – which is our passion.

“We wanted to bring all of that into one and have a sit down restaurant … just to slow people down and enjoy the historicness of the new arts district in downtown Jackson.”

Located in the historic Neely House, a few items Skillet Junction offers on the menu includes chicken & waffles, shrimp & grits, eggs benedict and lemon mascarpone pancakes.

Business hours at Skillet Junction are 7 a.m. to 3 p.m., Friday, Saturday and Sunday, and the restaurant has about 15 employees.

“Soon, we’ll offer a night lounge,” Regina said, “We have a full bar we will implement a couple of days each week. We’ve been well received … the community appreciates us – and we appreciate them.”
